Banana Oatmeal Pancakes
Ingredients:
2 cups complete whole grain or multigrain pancake mix
1 large firm banana, finely chopped
1/2 cup old-fashioned oats
1/4 cup chopped walnuts
Optional: sliced banana, mixed fresh berries, confectioners’ sugar and whipped cream
Steps to Make It:
Step 1: Create the batter
Prepare the pancake batter according to package directions. Stir in the banana, oats and walnuts.
Step 2: Cook the pancakes
Coat a hot griddle with cooking spray. Pour batter by 1/4 cupfuls onto the prepared griddle. Cook until bubbles start to form and pop on the pancake tops and the pancake bottoms turn golden brown. Flip the pancakes. Cook until the second sides of the pancakes are golden brown.
Editor’s Tip: One of our best tips for the perfect pancakes is to make sure the griddle is hot enough before ladling on the batter. Before pouring the batter, sprinkle several drops of water onto the cooking surface. If they quickly scatter across the griddle, the surface is ready to go.
