Ingredients:
1 tbsp olive oil
6 rashers of smoked bacon medallions, chopped
3 garlic cloves, pressed
1 stick of celery, chopped
2 red onions, finely chopped
1 kg turkey mince
175 ml red wine
2 cartons of passata
2 tbsp mixed herbs
1/2 tsp salt
Steps to Make It:
Step 1: Heat a large saucepan over low to medium heat and add the chopped bacon medallions and cook for a few minutes.
Step 2: Add the garlic, celery and onions and cook for a few more minutes until they have softened.
Step 3: Add the turkey mince and cook it until it is no longer pink.
Step 4: Add the wine and simmer until it has reduced by a third.
Step 5: Add the passata, mixed herbs and salt and mix through. Cover with a lid and simmer for around 60 minutes until the sauce has thickened.
Step 6: Once it’s cooked, serve with pasta, and vegetables and sprinkle with some parmesan.
